Best way is to start paying attention to the niche itself, but not just the consumer side. Look for what’s going on behind the scenes. What’s moving with the businesses that supply and support the businesses. Pay attention to their reactions. Subscribe to their content. Read their trade mags.

The niches you think are huge are usually bigger than you can even imagine, and they need your skills and services too.
